There are also those who take advantage of the fact that there is a little more time when traveling, organize themselves to cook and try those dishes that they never dared to prepare before, well… I think they are the minority! Calamar a la Malagueña

Ingredients (for 2 people) Preparation time is 15 minutes, and cooking time approximately 1 hour.

Fresh Squid Rings 400 g
Garlic, 2 cloves
Onion 1
Green pepper 1
Ripe tomato 3
Wheat flour 10 g
Sweet paprika 5 g
Fish broth 300 ml
Extra virgin olive oil
Salt
4 branches fresh parsley

First we are going to wash the squid rings and drain them, we let them drain for a while. We take advantage of that time to prepare the other ingredients:
It’s time to peel and finely chop the onion.
We wash, remove the stem from the green pepper, also remove the seeds and chop it into small cubes. Now we peel and crush the tomatoes.

Put olive oil in a saucepan and heat it, poach the onion and garlic for about 10 minutes over low heat. We add the pepper right here and poach it for 5 minutes until we see that the vegetables are tender.

Finely chop the parsley, and add it along with the wheat flour. Poach it for a few more minutes (2 min.) while we stir so that the flour cooks well. Add the sweet paprika and stir everything to incorporate well.

Immediately add the crushed tomato and the squid rings. Add salt to taste and let them cook for a couple of minutes. Then we add the fish broth and cook over low heat for another 40-45 minutes, or until you notice that the squid is tender.

If you wanted you could accompany this dish with white rice or mashed potatoes. Tasty! Enjoy your meal!
